I recently received some wild boar sausage links from my local food pantry. I thought, “What the heck am I gonna do with wild boar?”

So I asked AI for a recipe. It suggested I make meatballs and serve with spaghetti. I was determined to make it work!
How did I do it? Here’s how I did it:
- With a sharp paring knife, slice the casing of each sausage open. You don’t have to press hard, but it’s ok if you accidentally cut the ground meat a little. Discard casings.
- Cut sausage into 3 or 4 equal sections. Shape each section into a ball. It’s ok if it doesn’t hold a perfect shape. If you want, you can smush up all the meat after removing the casing and add breadcrumbs, egg, herbs and spices, etc. I did not because I wanted to keep this quick and simple.
- Cook according to package directions and serve with pasta and sauce.
